    Scads of Well-Written Recipes This cookbook has over 500 recipes that are usually in smaller proportions designed for two people. There is a super brief introductory section that talked a little about the buttons available on an Instant Pot, benefits of using the appliance, and why we should rethink our eating and home-cooking habits. The bulk of the book is the recipes. The division feels a little odd at times. For instance, soups and stews are greatly separated. I tend to see these as a unit. The bulk of the book is the recipes. The division feels a little odd at times. For instance, soups and stews are greatly separated. I tend to see these as a unit. What I found to be an absolute delight, though, is that there is a lot of vegetarian friendly recipes. Just about every section, except for the ones that are explicitly meat, had vegetarian recipes. (Be warned, though, that not all the vegetable recipes in *that* section are vegetarian!) I found the recipes to be well written and clear, which is such a pleasure, as these days they often are not! Some of the recipes are quite creative, yet they did not seem difficult or fussy. As with any cookbook with so many recipes, there will be hits and misses. But, with so many recipes, if you have an interest in using your instant pot for just two, you will have plenty to choose from to level up your dinner game and use your Instant Pot creatively.     I bought this kindle version because (a) I have an underused Instant pot, (b) there are only two of us, and (c) it was like $1.99. Hmmm.....I could have spent my money more wisely. The first thing I noticed about the cookbook was that the amounts and measurements were weird. I know that cooking for two is a challenge, but I foresaw a lot of wasted food when I was using only 1/4 cup of black beans. My next issue was with the "healthy" title. I saw one recipe that called for lard. Olive oil wound't w I bought this kindle version because (a) I have an underused Instant pot, (b) there are only two of us, and (c) it was like $1.99. I saw one recipe that called for lard. Olive oil wound't work? Then, I tried the "Hot Chicken Tacos (4525). OK, it sounded interesting with hoisin sauce and tamari. And, it was a little weird that the recipe called for 1/4 lb. turkey and 1/4 lb. chicken. Oh well. (See, unless you have a very kind meat counter, you would probably end up with 3/4 lbs of turkey and chicken left over.) After I followed the directions and pressure cooked it on high for 6 minutes, I had absolute soup. And, what a sweet soup it was. There was no way this dish was going to be tacos so I added cumin and chili powder and salsa and tried to make soup. It was passable after I dumped in the corn and black beans that were supposed to be garnishes. (I also added some cooked rice.) If I try another recipe and it's better, I will retract this review and post a more favorable one. I just read one recipe that called for 3/4 lb. whole chicken, cubed. How does one do that?

    I was very excited to get this cook book because it is just me and my husband and we always end up with leftovers that end up being wasted. However, some of the recipes had me completely baffled. Several recipes only ask for 1/2 lb of chicken. I rarely find anything smaller then 1 lb of chicken at my local grocery store so what ever I don't use I'm going to have to freeze (fine no big deal) but one of the recipes actually called for 2 drumsticks. Just 2 drumsticks? I understand that is meal plan I was very excited to get this cook book because it is just me and my husband and we always end up with leftovers that end up being wasted. My other concern was the endless ingredients, most of which I have never or rarely used and again feel as if purchasing them would be a waste of money. Not a major issue, but my other concern was no pictures. I understand not every recipe will have a picture, but at least a couple sprinkled about here and there would have been nice. All and all I was very disappointed in this cookbook. I received a review copy from Hidden Gems in exchange for an honest review.

    550 recipes most won’t eat So glad I didn’t buy this cookbook! I think there were 10 recipes I’d actually make for my husband or me. The items were either so rare that you would only ever use it when making this one dish, or very select. Lots Indian, Greek and Mexican choices.
