    This is a very helpful intro to keto for those who want to try the ketogenic diet but are wary of just eating tons of butter and bacon the way most modern keto teachings seem to lean. I've been fascinated by the keto diet for a few years since first learning about it as a treatment for severe epilepsy, which is what it was designed for by the Mayo Clinic nearly a hundred years ago. I have always considered it a sort of last ditch treatment for severe diseases and not something that I would use f This is a very helpful intro to keto for those who want to try the ketogenic diet but are wary of just eating tons of butter and bacon the way most modern keto teachings seem to lean. I've been fascinated by the keto diet for a few years since first learning about it as a treatment for severe epilepsy, which is what it was designed for by the Mayo Clinic nearly a hundred years ago. I have always considered it a sort of last ditch treatment for severe diseases and not something that I would use for weight loss or simple illnesses because in the past most keto dietary plans were so full of animal products. Even the Mayo said it was not a lifelong diet. Most children who followed the diet back then were able to cure their epilepsy within a couple of years on the program (!) and then they typically transitioned off. Back then it was a carefully monitored diet that needed to be developed by one of their specially trained nurses and very few doctors ever prescribed the diet because they always said that it would be too much work for mothers to safely follow it (most doctors never even mentioned it was an option to parents). Sadly, the treatment prescribed was generally serious medications instead, which often didn't work or had devastating side effects like blindness or brain damage. The keto diet remains one of the best treatments for children with severe epilepsy, as it has about the same statistical rate of stopping seizures as the heavy meds without the scary side effects and black box warnings. In any case, this is a great book that gives some background (not enough, but a bit) and then provides a wealth of vegan recipes that fall into keto guidelines. Weekly meal plans, shopping lists, charts of foods that are allowed and not, and more helpful bits combine to create a solid intro to keto living. Most of the ingredients are easy to find other than a few of the sweeteners that you'll probably have to order online or visit a specialty shop for. I also appreciate that they talk about "net carbs" and allow far more plants because of this. Net carbs are grams of carbs minus grams of fiber, meaning you can eat far more healthy plants than some keto diets suggest. As with most cookbooks by this publisher, the book is published in an attractive layout with color but there are only photos of recipes at the start of each section and most recipes do not contain photos. I would love to see this changed, especially as so many of us "cook with our eyes" and want to see what the recipe will look like before cooking it. Nutritional information is provided for each recipe. The weekly meal plans also provide basic information (fats, carbs, etc.) but not calorie counts, which I wish had been included. Most of the recipes are rather simple. Prep times and cook times are included. Not a lot of soy is used and the recipes are whole foods with a variety of tastes. Breakfasts are things like chia or smoothie bowls, tofu scrambles, or almond flour pancakes. Lunches are things like soups and salads. Dinners are things like cauliflower stuffed green peppers and good shepherd's pie. Repeats are provided in the meal plans to have leftovers and cut down on cook time. Some desserts and snacks are also given. Expect to eat a lot of types of cauliflower and coconut, but there are a variety of foods and flavors. Even though I am not vegan or keto, this is a cookbook I'll probably use at times. One of my kids is vegetarian and another has Celiac and has decided to go dairy free, and my oldest (21, out of the house but still coming for supper sometimes) is a cancer survivor with health issues. This book provides a wealth of recipes that will meet all of their needs, and mine as a mom concerned about healthy cooking who doesn't like to rely on many animal products. Well recommended.     This cookbook is an excellent resource for plant-based/vegan keto. I’m generally a plant-based eater for my heart, so keto doesn’t make sense for me right now in light of the science behind reversing heart disease—but it’s something I’ve done before, and hopefully something I can cycle in to my life again in the future. I thought the recipes were innovative and fun. They don’t seem to take much time to make, and many rely solely on ingredients already in the vegan pantry and fridge. I know that’s a minor thing, but it totally annoyed me when I was reading through the book! That annoyance aside, I’m glad to have this book and will definitely be using it in my meal planning when my macros allow for additional fats!! Each of the recipes includes an introductory description, ingredients listed in a bullet point sidebar (only US measurements given, with a metric conversion chart in the appendix), and step by step instructions. The nutritional info provided includes calories, fat, sodium, cholesterol, carbs, fiber, and protein . Very few of the recipes are photographed, which is a shame, but the photos which are included are clear and well done. Serving suggestions are attractive and appropriate. Special notes about the recipes (nut free, gluten free, etc) are listed in the header bars at the beginning of each individual recipe. There is also a good bibliography and interactive links section but no index. I liked the inclusion of a chapter with two complete weekly meal plans (and linked recipes). The meal plans include information about preparation, serving sizes, complete shopping lists, and other info. The recipe ingredients themselves are easily sourced and will be available at most well stocked grocery or health food stores. Four stars. I have some reservations about some information contained in the book (drinking cider vinegar does not, thankfully , 'alkalize' your body. Our bodies are remarkably adept at homeostasis and you can't substantially affect the pH of any of your independent systems (gut, blood, etc) at least not by ingesting a teaspoon of cider vinegar, however tasty). That being said, these recipes, especially the sauces and dips, are really tasty and well developed. I just tried out the Thai-Style peanut sauce over cauli-rice and it's absolutely delicious. I find the concept of a vegan ketogenic diet to be interesting, as the keto diet usually derives its proteins mainly from animal fats. Keto is not to be taken lightly, though, so readers should discuss the pros and cons with a medical professional if changing to a vegan ketogenic lifestyle. Myself, I am all about finding good recipes that fit in with my own dietary restrictions. Many of the recipes here can fit individuals with all sorts of dietary needs, like gluten free and dairy free. The authors start with a good introduction, explaining their philosophy on the vegan ketogenic diet and how best to be successful. They go through common concerns, like the keto flu, as well as the importance of micronutrients, pantry essentials, and a chart with foods to enjoy/avoid. The second section has meal planning for two weeks, including snack ideas and shopping lists. The recipe sections are as follows, with some of my favorite recipes per area: Sauces and Dressings: Thai-Style Peanut Sauce; Vegan "Sour Cream" (made with raw almonds and nutritional yeast); and Ginger-Lime Dressing. Breakfasts: Smoothies; Macha Donuts; and Tuscan "Quiche" Bites. Snacks: Jalapeno Poppers (stuffed with a flavorful almond mixture); and Jicama Nachos Salads: Asian-Style Cucumber Salad; Big Greek Spinach Salad; Japanese Hibachi House Salad Soups: Tomato Bisque (uses coconut cream for a velvety texture); Butternut Squash Soup with Tumeric and Ginger; Thai Tum Yum Soup Main Dishes: Buddha Bowl; Good Shepard's Pie Desserts: Coconut Macaroons; Chocolate Mousse Pie Cups Although I would not base my whole diet around these recipes, I definitely will be making many of them in the days to come. With good fats and lots of vegetables, there is a lot to like about The Vegan Ketogenic Diet Cookbook. The biggest drawback is the lack of photographs, as it is key in providing inspiration to those new to the lifestyle. Overall, this is a well planned out cookbook and one that I would recommend to readers looking to try something new.

The meal plans also include pantry and refrigerated staples as well as a shopping list for other items needed to make the suggested recipes. However, the best part is the recipes. There are eight sauces and dressings. Ten breakfast recipes include the yummy sounding Matcha Donuts and Chia Parfait. A note for those also following a gluten-free diet: This book uses mostly almond, coconut or other non-wheat flours so can be easily followed without worry. The snacks section contains a recipe for Jalapeno Poppers that is totally gluten-free (and the first one I’ve found that doesn’t just replace wheat flour with a one-to-one flour but instead uses cauliflower rice for the coating). There are thirteen salads and twelve soups including Vegan Pho and Thai Yum Yum Soup. The thirteen main dishes include pizza, tacos, chili, kebabs, and shepherd’s pie. Finally, the seven dessert recipes include ice cream, cookies, “cheesecake” bites, and chocolate mousse pie cups. The recipes include relatively few ingredients, easy-to-follow instructions, and full nutritional information. Unfortunately, there are few photographs but I think the clear explanations of the vegan keto diet makes up for that flaw. If you are thinking of going vegan keto (or just eating more healthy foods occasionally), the Vegan Ketogenic Diet Cookbook is a great tool to achieving your goal. 4.5 stars rounded up to 5 stars! I found the information about Why Vegan Keto and What the Perks are for eating that way, how to get started helpful. I liked the discussion and concerns mentioned of not forgetting micronutrients I loved the variety and easy to use recipes in this cookbook. The book starts out with how to eat keto vegan style. I liked the discussion and concerns mentioned of not forgetting micronutrients when eating vegan keto. I also appreciated the chart of Food to Enjoy vs. Foods to Avoid. Grin! Some of the recipes I look forward to trying are Tahni-style peanut sauce, nacho “cheese” sauce , Vegan “sour cream”, Almond and vanilla pancakes, matcha donuts, Avocado “fries” Jicama Nachos, “smoky “hummus” and veggies, finger tacos, Fresh Rosemary Keto Bread, several soups look yummy but I want to try Butternut Squash soup with turmeric and ginger, the Keto Margherit- O Pizza looks interesting along with the Good Shepherd’s pie and Cauliflower tacos. I like how these authors take favorites dishes and create them to be flavorful and eye appealing helping readers stay on the path to creating healthier habits. The only downside to this cookbook is the fact it had very few colorful food pictures. Each recipe had the serving size, prep time, a blurb about the recipe, easy to follow instructions with ingredients that are easily found in the supermarket. At the bottom of most recipes there is an ingredient tip and nutritional break down. This book can help you create some go to recipes for low carb eating too and a compliment to a regular keto diet.     I have been doing ket5off and on for a while. I gave never truly been able to commit fully to the life change. I think a great deal of it has been finding the right recipes because my family doesn't want to keto with me. This book is packed with meals they will eat and I can easily add a few sides to create meals the compromise to all of our food desires. I also felt the book is very well laid out and informative.     A Handy Cookbook…. I have really enjoyed looking through this book. While my family is not Vegan nor am I on the Keto diet, this cookbook is full of healthy and tasty recipes. It also gives a full shopping list for the two weeks of meal suggestions. It starts off with and introduction followed by 9 chapters. The recipes are clean, nutritious, easy to prepare and utilize ingredients that are readily available. I look forward to making the Herb Garden Dressing, Chia Parfait, PB&J Overnight Hemp, Tuscan "Quiche" Bites and Market Veggie Tofu Scramble.
